Hearty Minestrone Soup Recipe

INGREDIENTS
Serves 4
- 1 small onion
- 2 cloves of garlic
- 3-4 celery stalks with leaves
- 2 carrots
- 3-4 medium sized yellow potatoes
- 1 can white kidney beans
- 1 can of tomatoes
- 900 mL chicken or vegetable broth (1 box)
- 1 tbsp dried rosemary
- 1 tbsp dried oregano
- Salt and pepper to taste
METHOD
- In a large pot over medium heat, sauté onion and garlic in olive oil until soft and fragrant.
- Add in the chopped carrots, celery, potatoes and white kidney beans and let sauté for approximately 2 minutes.
- Next, pour in canned tomatoes and chicken or vegetable broth. Add spices, stir and let everything simmer until vegetables are tender. Ensure you continue to stir the soup periodically while cooking so as not to let the bottom burn.
- Once vegetables are tender, approximately 20 minutes, add in pasta and let soup simmer until everything is heated through and pasta is al dente.
- Serve soup how with a sprinkle of grated Parmesan or Romano cheese and a side of toasted crusty buttered bread.
