Easy Banana Bread Crumb Cake to Make this Spring

This is a banana bread crumb cake recipe that you will be sure to make on repeat. Banana bread is one of the few types of desserts that can be made throughout the year regardless of the season. It is also a rare recipe that can be served for breakfast, with tea as a sweet afternoon treat, or of course as a delicious evening dessert. This is such an easy banana crumb cake to bake so you’ll always know what to do with those leftover bananas that are too ripe for anything else. Find the ingredient list and method for baking below. INGREDIENTS

Yields 2 Coffee Cakes

INGREDIENTS:

CAKE:
  • 2 1/2 cups all purpose flour sifted
  • 1 1/4 tsp baking soda
  • 1 1/4 tap baking powder
  • 1 3/4 cups sugar
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2 eggs beaten
  • 4 small bananas mashed
  • tsp vanilla extract
  • 1/2 cup vegetable oil
  • 3/4 cup milk
CRUMBLE:
  • 6 tbsp butter room temp
  • 1/2 cup flour
  • 1/2 cup brown sugar

METHOD

1. Preheat oven to 350°F

2. Sift flour, baking powder, baking soda, salt and cinnamon.

3. Beat eggs, sugar, and oil. 

4. Add milk, vanilla extract, mashed bananas to wet ingredients and then and dry ingredients. Mix until combined.

5. Grease 2 9” cake pans and pour batter into pan.

6. Mix all ingredients for the crumble by hand until a crumble texture is formed. Sprinkle on top of each cake.

7. Bake for 45 minutes or until a toothpick comes out clean. 

8. Let cool on wire rack for 10 minutes before removing from pan.

9. Enjoy with a scoop of ice cream on the side for extra deliciousness! 

Keeps in fridge for up to 5 days.
