Sausage, Peppers and Onions

There’s something about sausage, peppers and onions that makes me think of spring. Maybe it’s the fresh produce and the thought that farmers markets will be opening soon, or maybe it’s the fact that I simply cannot stand the thought of making another stew! Either way, when the smell of this dish wafts through my home I’m instantly transported back to my mothers kitchen in the spring and summer. I like to serve this dish with a warm french loaf and large fresh salad. This recipe is simple and quick to make, and as an added bonus it only dirties one pan. Your cleanup will be a breeze and you’ll be lounging on the couch before you can say ‘Netflix and chill’.

You’ll notice in this recipe, as with a lot of my recipes, my measurements are never exact. For this recipe, you can add more or less produce as you see fit, always try to ensure that the pan is not overloaded as this can hinder the cooking. You can also use mild, medium, or hot pork sausage or even a combination of all three. Another delicious type of pork sausage is with fennel seed. Have fun with it!

INGREDIENTS

Yields 4 servings
  • 1 package pork sausage links (approx. 4 links)
  • 2 bell peppers (green, red, yellow or orange) 
    • I didn’t have bell peppers on hand so I used bite sized peppers as shown in the photo above 
  • 4 medium size yellow potatoes
  • 2 tbsp olive oil
  • 1/2 onion
  • Salt & pepper to taste (opt.)
  • 1 tsp oregano

METHOD

  1. Preheat oven to 350ºF.

  2. While the oven preheats, take out a large baking sheet and line with parchment paper.

  3. Cut the sausage links approximately 2″ inches in length and place on the parchment paper.

  4. Wash and cut peppers and onions. Wash, peel and cut potatoes.

  5. In a large bowl, combine vegetables, olive oil, salt, pepper and oregano. Using your hands, or a large wooden spoon, mix until all the vegetables are coated.

  6. Pour the vegetable mixture onto the large baking sheet  with the sausage links and distribute evenly.

  7. Place the baking sheet into the oven to cook for approximately 40 minutes. Mix the sausage and vegetables throughout the cook time to ensure even cooking.

  8. Serve and enjoy!
